Love great food and wine? You can now pair your love affair with wonderful Italian food and wine with a spectacular rafting and kayaking adventure on Oregon’s Rogue River. This trip is paradise for food lovers everywhere.
Chef Matt Morse is back to entertain and delight you with his passion for Italy’s rustic foods and fabulous wines. Matt has been Whitewater Warehouse’s resident “gourmet chef” for many years. His culinary and wine knowledge are impressive but not intimidating. His food is pure and true because it is born out of his many travels through Italy’s famed culinary Provinces.

Antipasti
Roasted red pepper flan with fonduta & smoked salmon -- paired with Ferrari Brut
Funghi al cartoccio with bacon & fresh herbs – paired with Brezzo Dolcetto San Lorenzo ‘05
Italian meats with olives & fried gnocchi -- paired with Ruggeri Corsini Barbera Armujan

Agnolotti del plin filled with mixed herbs, sauced with sage butter & topped with Reggiano Parmesan – paired with 2001 Produttori del Barbaresco Reserva “Pora”
Secondi
Pork cooked in milk with fresh fennel – paired with Barolo & Vietti Castalione Falleto
Dolce
Yogurt panna cotta with mixed berries – paired with Elio Perrone Moscato Sourgal
To recap the trip, you will raft each day through the spectacular Rogue River canyon, lunching riverside. In the evening, you will stay in historic lodges—Black Bar and Marial. There, you will enjoy superb wines (from Matt’s personal wine cellar) matched with hors d’oeuvres and a multi-course Italian supper. Mornings you will rise to country breakfasts fixed by the lodge staff.
This is a 3-day, 2-night adults-only lodge trip.
